Brussels Sprout & Chorizo Pasta

I am definitely on the side of the sprout. What’s not to love about them? They are green, if you don’t boil the goodness out of them they have anti cancer properties & they taste great! Don’t argue with me – I’m right.

Pop them in a dish with chorizo & I’m in heaven:

Cut the end off & par boil the sprouts. Remove, drain & halve.

Fry chorizo in a pan whilst cooking some pasta. Add a bashed garlic clove & a tin of chopped tomatoes with a little bit of water.

When the pasta has about 2 minutes left, add the sprouts to the chorizo and season.

Drain the pasta & mix it all together.


Serve with a little grated parmesan.
