Mustard Chicken with Home Made Chips

I’m a bit obsessed with home made chips. I don’t think I have ever eaten so much potato. It feels like it’s on the menu everyday. I’m not complaining though.

Mr S deboned some chicken thighs.

Toss the thighs in a mix of olive oil, dried tarragon, fresh chopped parsley, red wine vinegar & dijon mustard, leave them to marinate for a little while. We retired to our new office to listen to music & decide what else the room needs.

As the oiled & seasoned unpeeled potato chips cook in the oven, griddle the chicken on a high heat for a minute each side then add to the oven for 6-8 minutes.


Sprinkle with more parsley & serve.
