Fragrant Egg Curry

Mr S picked most of the dishes for this week. You can’t get him out of his new office at the moment. Egg curry doesn’t sound like the most enticing of dishes does it? Well let me tell you, it’s lovely.

Put an onion, some ginger & a couple of garlic cloves in a processor. Blend to a paste.

Heat some oil in a pan & add the paste on a low hear.

Add 40g of (hot) curry powder, some turmeric, a cinnamon stick & some curry leaves. Give it a stir.

Add a tin of chopped tomatoes then using the tomato tin, half fill it with water & add that too. Bring it to the boil then reduce & simmer.

Hard boil 8 eggs, mine took 8 minutes. Plunge into iced water then shell, halve & add to the pan along with some red lentils & frozen peas. Stir & cook until the lentils & done, add more water if required.


I only needed half of the sauce for the 2 of us so I’ve saved it to make another curry later in the week.

  1. I love eggs in curries and braises but my Mister isn’t so keen. This looks like filling comfort food that won’t break the bank and using ingredients you probably already have lying around 🙂
