Chorizo Hash with Fried Egg

We finally got to eat something properly tonight. What a way to get back to normal than with my old favourite, chorizo.

The room is almost finished, just awaiting a couple of finishing touches.

Inspired by November’s BBC Good Food Magazine:

Cook some cubes of potato . Drain.

Fry off some thickly sliced chorizo & remove from the pan.

Add sliced onion to the pan along with some olive oil then cook until soft & golden.

Add the potato & increase the heat. Cook for about 10 minutes.

Return the chorizo to the pan, meanwhile fry the eggs.


This is my perfect meal. Fast, full of flavour & a shed load of chorizo.
