A nice light fish dish was the perfect antidote to pie, pie & more pie.
Make the salsa using chopped avocado, mango, onion & chilli.
Mix together a teaspoon each of dried basil, thyme, white pepper, black pepper, salt, onion powder & paprika plus 2 teaspoons of cayenne to make your blackening spices.
Pat the cod dry and cover with the spices.
Heat up a pan with a bit of oil and fry the fish on each side for 2 minutes.
Finish off in the oven for a few minutes, depending on the thickness of your fish.
Serve with some warmed through red kidney beans.
