Blackened Cod with Mango Salsa

A nice light fish dish was the perfect antidote to pie, pie & more pie.

Make the salsa using chopped avocado, mango, onion & chilli.

Mix together a teaspoon each of dried basil, thyme, white pepper, black pepper, salt, onion powder & paprika plus 2 teaspoons of cayenne to make your blackening spices.

Pat the cod dry and cover with the spices.

Heat up a pan with a bit of oil and fry the fish on each side for 2 minutes.

Finish off in the oven for a few minutes, depending on the thickness of your fish.

Serve with some warmed through red kidney beans.

  1. It looks very delicious. The sort of thing you’d want to eat ready made. I love your combos. They are always so interesting. Thanks for sharing!

Any thoughts?
