Warm Goats Cheese Salad with Fried Egg

I love an egg on a salad. When I was little the idea of a salad was lettuce, tomato, cucumber & radishes along with a hard boiled egg (boiled that much that the yolk forgot what colour it was). I used to shudder when the word salad was mentioned, but I loved the boiled egg with a bit of salad cream.

The definition according to Google is “A cold dish of various mixtures of raw or cooked vegetables, usually seasoned with oil, vinegar, or other dressing”. Thank goodness!

Make a dressing of lemon juice, wholegrain mustard, chopped capers, olive oil and seasoning.

Cut a log of goats cheese into rounds and dip in floor, egg then fresh breadcrumbs.

Fry gently in oil for a couple of minutes until browned all over. Arrange on top of the salad ( I bought a bag of mixed). Then drizzle with the dressing. Top with a fried egg and a pinch of black pepper.


Absolutely perfect.
