Oven Baked Ratatouille & Sausages

A meal that takes about 30 minutes, the majority of which is the cooking time, and only needs one pan. If you like sausages and easy to cook food, this dish is for you.

Heat the oven to 200º(fan).

Put a chopped onion, 3 courgettes (thickly sliced) and a chopped red pepper into a baking dish. Drizzle with olive oil and season. Pop in the oven for 10 minutes.

Brown your sausages in a pan. We used Lincolnshires from the market.

Stir chopped garlic and a tin of chopped tomatoes into the veg, we also added some leftover fresh tomatoes to the pan. Season and give it a stir. Pop the sausages on top and pop back in the oven for another 20 minutes.

Incidentally, Ratatouille is one of my favourite animated movies.
