A Greek Pasta-zanella

This is just a simple pasta salad recipe but I had some stale-ish bread that needed using up, hence it’s name.

Cook some pasta and leave to cool.

Chop some tomatoes, cucumber and red onion.

Tear up some bread.

Add it all to a bowl then crumble in some feta cheese and add some olives.

Season with salt and pepper and toss.

Whisk up some olive oil and lemon juice then drizzle over your salad.

Garnish with chopped mint and lemon zest.


I took leftovers for work lunch the following day.

This was dinner…8th August 2013.
