Tomato Crostini with Feta & Basil

This meal and most of this weeks are from Good Housekeeping – Healthy Family Recipes seeing as there is no inclination to visit the gym.

Pop a garlic clove, basil, pine nuts, lime zest, lime juice and a little extra virgin olive oil into a mini processor and whizz until smooth.

Add some feta and whizz again, check if it needs a little more oil or a bit of water and season.

Toast some slices of good quality bread, I used sourdough.

Toss sliced tomatoes, a tub of salsa and some olives together.

Divide the tomato mixture between the toast and top with the feta pesto.

Garnish with basil.

This was utterly divine. Fantastic explosion of flavours, I could spoon the feta mixture on everything and did indeed use it on my sandwich for work the next day. It makes a lovely dip too. I will definitely be having this again.
