Prawn, Courgette & Leek Risotto

I think it’s a hangover from before I started cooking and I know it’s silly but it’s easy to think that if it’s tagged lower fat or healthy eating there is going to be something lacking in taste. Obviously this is NOT the case but psychologically it’s how I always think.

I’d definitely put this risotto high on the list of favourite risottos. The combination was perfect.

Heat some oil and a little butter in a pan and add a finely sliced leek, a bashed garlic clove and 2 sliced courgettes.

Add the rice and stir for a minute.

Pop a ladleful of vegetable stock in and stir. As the rice absorbs the liquid, add your next ladleful and so on.

When the rice is almost cooked, add cooked prawns and season.

Add a little more stock and stir a small knob of butter through. Remove from the heat and leave to stand for a couple of minutes.

Stir in some parsley. I upped the calories a little by adding some parmesan.

Incidentally, Mr S lost at garlic clove roulette today, which makes a change and I got to take leftovers for lunch.
