Sausage & Bean Casserole

When I was a kid one of my favourites was tinned beans and sausages. They are still a guilty pleasure of mine. This recipe is like  a grown up version of those although it comes from the Cooking with Kids app so maybe not too grown up after all.

Brown your sausages in a pan. Meanwhile, dice an onion and a large carrot, then add to the pan with the sausages and let them colour a little. Add some English mustard to the pan and stir then add half a litre of vegetable stock, a bay leaf and some chopped parsley. Bring it to the boil then add a tin of baked beans. Give it a stir then turn it down, cover and simmer for about 45 minutes to an hour. Season to your liking and serve.


The key to this is to buy the best sausages you can. Don’t put any cheapies in here. We bought ours from Doncaster market and they were amazing. A jacket potato would be nice with this.
