I personally think this is one of the best chicken sandwiches I eaten for a long time.
We used 2 chicken breasts and Mr S butterflied them. As I don’t like to eat massive amounts of meat I was more than happy to eat the ‘smaller half of the butterfly’.
Mr S pan-fried the chicken which had been sprinkled with hot chilli powder, salt & pepper. As it was butterflied only took a few minutes each side.
I made the blue cheese dressing which used 1 part crumbled blue cheese and 2 parts yoghurt with lemon juice and salt and pepper to taste. Mix well.
Once cooked, let your chicken rest.
Melt some butter in a pan, once its melted remove from the heat and add some hot sauce.
Arrange some lettuce and sliced red onion on a bun, drizzle the hot sauce mix on the chicken then pop on the bun. Drizzle some more for good measure. Put a couple of dollops of the blue cheese dressing on. Top of your bun and serve.
We served the second one in some leftover polish bloomer with the chicken chopped up.
My one note would be that Mr S bought a more mature blue cheese than I would normally have but as there wasn’t too much I was OK with it.
It’s chicken again tomorrow. Mr S couldn’t be happier.
