Soy Beansprout Salad with Fried Egg

This is a nice light dish for a Monday night, especially after the richness of this weekend.

Mix together some beansprouts, sliced spring onions, chopped green beans and sliced chilli.

Make a dressing using soy sauce, rice vinegar and caster sugar.

Toss your beansprout salad in the dressing.

Arrange your salad and serve topped with an egg fried “over-easy”. Drizzle with a little more dressing, a sprinkling of pepper & a couple more slices of chilli.

It’s almost healthy if you don’t count the egg.
