All that was left on our list for tonight was a dish that used up some boring leftovers. Neither of us fancied a rather, let’s say eclectic, fish salad so after shouting out ideas and each of us turning up our nose & rejecting the idea of a takeaway, Mr S picked up the current Good Food magazine & here were these little beauties.
They are a tribute to the Eurovision Song Contest which I don’t think I’ve watched since about 1999. For the record, we were represented by a girl group called Precious. No? Me neither.
What an excellent take on the meatball these are. They use pork mince, breadcrumbs, caraway seeds, wholegrain mustard, nutmeg and honey. It also says to use an egg but I didn’t bother. These bake in the oven for about 20 minutes. Spread cranberry sauce on your bread bun. Top with cucumber marinated in white wine vinegar and golden caster sugar. I also popped on a splodge of crème fraîche Trust me, these are excellent.
The downside? Scrubbing the baking tray afterwards.
