I think the Quesadilla is such a wonderous thing. A tortilla and whatever you want to pop inside, all held together with delicious, delightful cheese. So versatile.
One of our favourites is Parma ham & jalapeños and the cheese is always an extra mature cheddar.
These were in an edition of BBC Good Food magazine and consist of black beans, cannellini and shallot. I cheated with the guacamole, I only really make it myself on special occasions. They were really good although when I do them again I will add a bit of red chilli to the mix.
